A small tonnage of fruit was sourced from Summerland, 90% Thurn Vineyard and 10% Savard Vineyard. Mostly free-run juice, the components were fermented separately, aged in stainless steel, combined after 4 months, and filtered prior to bottling to promote a clean, refreshing mineral-driven style.
Fleshy Meyer lemon, grapefruit, and white flowers on the nose with the spritz of honeysuckle puffing out of the glass. Lime to pale straw in color. A precise and lifting acid guides clean flavors of melon, jolly rancher, and crisp apple skin from its inviting beginning to a thirst-quenching finish which invites the next sip.
Appetizer: crudité / cheese platter (endives, ham, gruyere, and hummus)
Main: smoked salmon pasta, with a light cream sauce, Romano cheese, and mushrooms
Dessert: cantaloupe and other fresh fruits topped with mascarpone and whipped cream
