The 2018 foxly pinot noir is made of 100% pinot noir grapes from the Okanagan and Similkameen Valleys. The fruit was partially destemmed, leaving one-third of the whole clusters to add complexity. After 3 days of cold soak, the fruit was inoculated with a choice selection of yeast strains. Manual punch downs were performed over a two-week period three times daily, reducing to twice daily towards the end of fermentation. Following fermentation, the wine was transferred to 30% new French oak barrels. Malolactic fermentation occurred naturally in the barrel and the wine aged sur lie for 14 months, continuing to keep the original vineyard blocks separate until blended just before bottling. The wine was racked, blended, and filtered, prior to bottling in April 2020.

tasting
The 2018 foxly pinot noir has a youthful garnet hue. Black raspberry and vanilla greet the nose, strawberry and cranberry aromas combine with warm spices of clove and nutmeg. Spice and a touch of earth and smoked meat compliment a fresh mineral palate with a cool finish. Enjoy now or age medium term.
